A sparkling pink refresher, extremely low alcohol (1.5°) and extremely aromatic with notes of rose petals and elderflower. An infusion of ash leaves and elderflowers picked from the hedges surrounding the vines and co-fermented with fresh grape marc (fer servadou) from the press. Produced like a natural sparkling wine. No additives or residual sugars. Enjoy alone, with a sweetener (syrup) or get creative and use it as a mixer.

About the Winemaker
Marc Fraysse is a rising star: young, dynamic and devoted to 4ha of vines planted in he steep slopes of his childhood home, a pretty village called Balsac, 14km from Rodez. He created Domaine des Boissieres in 2017 and today, old Fer Servadou (known as Mansois in the Aveyron) rubs shoulders with younger vines including Prunelard and white varieties (Chenin, Ondenc and Roussellous). A winegrower to watch.
