de-stemmed, gently macerated for 10 days in concrete tanks and aged for 1 year in 500l barrels before bottling on 24 September. The Bouysselet grape variety is endemic to Fronton. It was re-discovered in Villaudric by Diane and Phillipe Cauvin who grafted cuttings onto old vines at La Colombière in 2011 and 2015. Today it is protected by the AOC and is one of the most exciting up & coming grape variety in the Southwest: a descendent of Savagnin (Jura) and the Plant de Cauzette (Béarn).
