When it tastes of an IPN that’s a bit rusty, the pole on the metro at 5pm, when you have a 5 centimes coin in your mouth, when your sinusitis is making friends with meningitis on the second sip, it smells of an oenologist who doesn’t want to be sued for letting things slide.

Add to that a strong tannin from Cabernet Sauvignon, Malbec, Tannat from behind the woodpile, not quite ripe, that’s licked a not-so-clean marc pump a bit too much, with a not-so-nice maceration, and we’re bordering on sadism. Of course, they’ll prescribe 10 years in the cellar. Love and violence...

The Southwest is a land of tannins, sometimes rocky, with a rugby accent when you look for a little more substance. Tannin is the antioxidant par excellence, especially as it likes a few micro doses of oxygen to ‘polymerize’ (that goes down well at dinner parties), meaning ‘to become velvety’. It is indeed age that softens all these elements in the bottle, thanks in particular to the oxygen that passes through the cork. Unlike sulfur - like stupidity, time doesn’t change anything regarding that.  

Contrasts is a hundred or so natural growers making wines with extremely limited doses of SO2, in line with the standards of the ‘Vin Méthode Nature’ label : 30 mg/l total SO2 for reds and 40 for whites MAX. Et basta!
